As I have made known I married a meat and potatoes boy - I am not.  So it has been one of my missions in life to come up with new creative meals to satisfy his appetite and my desire to try different things.  


These recipes are kitchen tested – meat and tater boy approved.

Buffalo Chicken! So tasty!  So Easy!

Here is a recipe that I found a weeks ago.  It was so good I have now made it twice.  The first time I made it I followed the direction exactly (minus the butter – didn’t see the need).   The second time I was in a hurry and to speed up the process;  boiled a whole chicken, shredded the meat then stewed it in the sauce for half hour.  Couldn’t tell the difference.    It was still yummy!
I recommend toasting the buns – you will thank me later.  I buttered one side of a bun or Texas toast and grilled them in a cast iron skillet (like grilled cheese).  
 I HIGHLY recommend serving this sandwich with coleslaw – on the sandwich…I promise it will bring it to a new level!   Caution – it can get messy, in a glorious to-goodness type of way.  Enjoy!!

So I signed up for the Beef Its Whats for Dinner Newsletter (link below).  They send me recipes to try using BEEF!  We like beef in this household.   This recipe looked simple, and sounded interesting.  Added bonus –it can be made using 1 skillet!  This recipe was great!

Tamale Pie
I was looking for something different, a little more exotic.  I found it in the form of Tamale Pie.  It was a bold, daring recipe – and as I looked at the ingredients I knew it couldn’t fail.  To sum it up, it’s a kick-a$$ corn bread recipe + seasoned chicken smothered in enchilada sauce.  Oh it was scrumptious!  To good not to share!  I challenge you to try it!  
Notes – 1) I didn’t use egg substitute- I just used 1 egg! 2) Didn’t use fat free milk...what’s that!?  3) I used whatever cheese I had on hand 4) I didn’t have ground red pepper, so I used crushed red pepper.

Chocolate Pie!

I come from a long line of cooks, and my mom’s chocolate pie recipe is very similar – however it is not written down and this one is pretty close to it. (I like to have things online with reviews other than my own.  I am also not a food photographer – websites have more attractive photos than I could take)

I also come from a long line of goofy country women that refer to meringue as “Calf Slobbers.”- If you grew up around cattle or had to bottle feed a calf you may get the reference.

Once a week we try to have a couple of people over for dinner - it helps with my need/tendency to overcook and feed people.  This is a crowd pleaser, plus it looks fancy and bonus -Bacon!!! It's called Shrimp Carbonara and you should give it a whirl!Here is the official recipe website!

Energy Bites! A.K.A. "Gorilla" Balls - healthy, tasty - too good to be true! 

They are really granola bites -or balls,  my friend had a slip of the tongue telling me about them and called them "Gorilla" balls.   The name stuck.  They are very wholesome and tasty!  They taste like a candy bar - but do not have any sugar in them but some honey, which means they are healthy! (right?)  They are perfect for breakfast with coffee or on the go for a quick snack!

Ingredients:  1 cup of oatmeal, 1 cup of coconut,  1/2 cup of mini chocolate chips, 1/2 cup of ground flaxseed, 1 tsp of vanilla, 1/2 cup of creamy peanut butter (or any type of nut butter), 1/3 cup of honey, 
1 tsp of vanilla.  Mix together until well incorporated. Chill for 1/2 hour. After that roll into bite sized balls. Keeps in fridge up to 1 week.  Click here to see original post Chuck Wagon Update

Burritos!
Here are the ingredients...
1/2lb. of hamburger - or more
1 can of corn
1 can of black beans
1 can of diced tomatoes - not just any can but a can of Fire Roasted Tex Style diced tomatoes - they were amazing!!! Found them at Wal-Mart - it's new!
1 can of Queso cheese
Burritos shells or Tortilla Chips
Diced Onions - as desired
1/2 tsp of minced garlic
You will need a large skillet

So fry the burger, garlic (salt and pepper as desired), and onions together.  Drain and set aside.  Saute the corn in the same skillet as the beef - do this until the corn starts getting a little brown - almost like its grilled.  Drain black beans from the juices in the can.  Add beans, tomatoes, and ground beef.  Let it simmer. It will be really pretty at this point. Lots of color!
Mix in the can of queso cheese until bubbly - it will take on a texture of a dip.
This can be then wrapped in burrito shell or it's great with chips!  I just didn't have any in the pantry!
